Pinot Rosé

Overview

With our Rosé we are looking to make the highest quality possible example of this style from our terroir. For us that means a crisp and dry premium Rosé with a refreshing dry palate made from 100% Pinot Noir grapes showing strawberry and raspberry, complemented by texture, balance and length. Our Rosé is a high quality wine and not a collection of leftovers from making other wines.

Food Matching

Our Pinot Rosé is a highly versatile wine and can be drunk as a refreshing summer aperitif though from the benefit of it’s natural acidity also extends itself from seafood to fish and on to our favourite which is pairing with Mexican inspired pork dishes such as our Cochinita Pibil that is regularly served from our estate free range pigs.

Growing

Our Rosé is a single block within a single vineyard Rosé an approach that is used for only the finest wines. Our Block A Rosé is the highest block in our vineyard and consists of 100% Pinor Noir 115 clone grafted on Cabernet Sauvignon. The grafting process took some years to take fully and the 115 vines are very low yielding. We pick it fairly light at 12-13 Baumé and the result is lightly flavoured grapes with high acidity that we think are perfect for cool climate Rosé.

Winemaking

Our approach to making the Rosé is to capture the refreshing nature of the vines with minimal intervention. The grapes are crushed and then left to soak up some colour and flavour for a short period of time before being pressed and left to ferment over a period of weeks. The wine then settles before being bottled and on the shelf in a relatively short period of time as it is a fresh wine designed to be drunk young.
